Tuna and Barley Herb Salad with Lemon Vinaigrette
Ingredients (2 Servings):
1 lemon, zest and juice
1 tbsp dijon mustard
1 tbsp olive oil
1 tsp honey
salt and pepper to taste
1 can (5oz) tuna in water, drained
1 cup cooked barley
1 small bell pepper, cored and chopped
2 tbsp fresh parsley, chopped
1 tbsp fresh mint, chopped
1 tbsp fresh basil, chopped
Preparation
Cook barley as directed on package. Reserve 1 cup.
In a bowl, whisk together zest (if desired), juice, Dijon, oil, and honey. Season with salt and pepper. Add tuna and stir to coat. Add remaining ingredients and toss. Serve cold or at room temperature.
