Foods that support healthy kidney function and an easy recipe for Chicken Stir Fry (based on a Mayo Clinic Recipe)

CHICKEN STIR FRY (adapted from the Mayo Clinic and part of the kidney diet)

Ingredients

  • 1 tablespoon olive oil
  • 1-2 cups cubed chicken
  • Garlic powder and onion powder to taste
  • 1 teaspoon sesame oil
  • 1 medium onion, sliced
  • 1 red bell pepper, chopped
  • 1 cup cauliflower, chopped
  • 1 (8-ounce) container button mushrooms, sliced
  • 1 green onion, chopped
  • 2 teaspoons chopped fresh garlic
  • 1 crown broccoli, chopped into florets
  • 4 egg whites
  • 1 tablespoon coconut aminos or reduced-sodium soy sauce

Directions

Cut chicken into thin/bite sized pieces.  Season with garlic powder and onion powder and mix around until seasonings are evenly distributed.  Heat a nonstick skillet over medium heat and add olive oil. When the oil becomes hot, add chicken in a single layer and cook 2-3 minutes and flip.  Continue cooking until chicken is cooked through, remove from pan, and set aside.  Add onion, garlic, peppers, and mushrooms. Season with garlic powder and onion powder to taste.  Stir.  Sauté for 2 to 3 minutes. Add cauliflower, green onion. Once the vegetables are tender, add broccoli and carrots and place a lid over the pan for 2 to 3 minutes to steam the vegetables. Once tender, make well in center cook and scramble egg whites.  Mix egg whites in with vegetables and stir in coconut aminos/soy sauce. Serves 4.  ***I had a zucchini that needed to be used, so I chopped and added that with the onions, mushrooms, and garlic.  This recipe is great because you can easily make changes to fit your tastes and desires!**
