Nutrition Spotlight: Eat for Kidney Health (Baked Fish Tacos)

Did you know part of taking care of your kidneys includes paying attention to nutrition?  When your kidneys are impaired, they do not remove waste products and fluid from your body the way that they should.  A kidney-friendly diet can help you stay healthier longer.

What does a kidney-friendly diet look like? It is lower in sodium, higher in fruits and vegetables, limited dairy and processed foods, and may reduce meat, poultry, and fish.

Now that you know what foods to limit, here are 15 healthy foods for a kidney-friendly eating plan: red bell peppers, cabbage, cauliflower, garlic, onions, apples, cranberries, blueberries, raspberries, strawberries, cherries, red grapes, egg whites, fish (white fish, mackerel, rainbow trout, or salmon), and olive oil.

For the Fish Tacos

  • 1 pound tilapia
  • ½tablespoon olive oil
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt more  less to taste
  • ¼ teaspoon pepper
  • ¼ cup lime juice

For the Cabbage Slaw:

  • 1/2 head green cabbage, thinly shredded
  • 1/4 head purple cabbage, thinly shredded
  • 1 large carrot, shredded
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or agave nectar
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste

Preheat oven to 400 F and line a baking sheet with a silicone mat.  Pat both sides of fish dry and place in gallon plastic bag with olive oil, paprika, cumin, chili powder, onion powder, garlic powder, salt, pepper, and lime juice and let marinate 30 minutes.  Place marinated fish on the baking sheet and bake for 10-12 minutes, until the fish is fully cooked and flakes easily with a fork.  For slaw, toss together all ingredients and store covered in fridge until ready to use.  Remove fish from oven and cut into chunks and serve in tortilla with slaw and toppings of choice.

**Note** Additional toppings can be beans, avocado, corn, cilantro, cheese, pico de gallo, guacamole, onion, etc. (We topped with black beans and onion).

**Note** Can be cooked in air fryer at 350 for 12 minutes.
