An easy way to make a whole "rotisserie" style chicken at home.

Did you know that rotisserie chicken, while convenient and delicious, is filled with chemicals and preservatives?  You can find organic whole chicken for a reasonable price, cook it without much effort, and use the meat in a variety of meals (and/or freeze the leftovers for later use), and use the bones to make your own broth.  All low effort and high reward ways to control the ingredients, maximize nutritional value, as well as make the most of your budget.

Instant Pot Whole Chicken

Ingredients

1 whole chicken (4lbs), giblets removed

1 tbsp avocado oil

1 tbsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp dried time

1 tsp dried rosemary, crushed

1.5 tsp sea salt

½ tsp black pepper

1 cup chicken bone broth

1 small yellow onion, halved

1 head garlic, sliced crosswise

Instructions 

Pat the chicken dry.  In a small bowl, combine the smoked paprika, garlic powder, onion powder, thyme, rosemary, salt, and pepper.

 Rub avocado oil all over the chicken, then rub the spices into the chicken front and back.

 Select “Saute” on the instant pot.  Once hot, sear the chicken breast side down for 4-5 minutes until golden.  Turn over with tongs and repeat on back.  Remove chicken and set aside.

 Pour chicken broth into the pot and scrape the bottom with a wooden spoon to remove browned bits.  Add the onion and garlic to the liquid.  Set trivet in the pot and put chicken, breast side up, in the pot.  Pressure cook for 24 minutes (6 minutes per pound).

 Natural release for 15 minutes, then open vent release remaining pressure.  Remove the chicken to an oven safe container/baking sheet. 

 Broil chicken in the oven for 3-5 minutes until the skin is crispy.  Rest 10 minutes before carving.

This chicken is moist and flavorful and works wonderfully as a meal with roasted or steamed vegetables, sliced for sandwiches, pulled apart/ chopped for chicken salad, tacos, burrito bowls, quesadillas, or used in soup and the carcass can be used to make chicken broth.  The organic chicken was from Aldi and was around $10, so it is easy on the wallet, low effort, and endlessly customizable (use whatever seasonings and spices you prefer).
